What are some great ideas for Plant based foods?

Hey all,
I have recently become aware that Plant based Foods are really good for a healthy life and avoiding all sort of illnesses from cancer to heart attack, etc. My question is what are some good ideas for making Plant based Foods? I mean there is only so much boring salad you can eat. Your answer can also be in form of related cooking books you know for making delicious Plant based Foods. Although I am not quite sure you can even call Plant based Foods to be cooking! Can you? Anyway, what suggestions for delicious Plant based Foods you all have? Thanks.

Eggplant with is in my opinion the best Plant based food. It is shame that most people do not like or appreciate the amazing versatility of Eggplant!

1- Bake Eggplant 1/2 inch slices in Olive oil and Salt lightly applied for 45 Mins
2- Layer Marinara sauce and Eggplant and Mozzarella Cheese
3- Do this for 2 layers and in top layer add Mushroom
4- Top whole thing with even more Marinara sauce
5- Bake for another 15 Mins

Amanda, a very delicious Plant based food is Eggplant Parmesan. Which is really easy to make and ooooooh so delicious. Actually I think it tastes better than Filet Mignon or Roast of Lamb.
Here is how:
1- Bake Eggplant 1/2 inch slices in Olive oil and Salt lightly applied for 45 Mins
2- Layer Marinara sauce and Eggplant and Mozzarella Cheese
3- Do this for 2 layers and in top layer add Mushroom
4- Top whole thing with even more Marinara sauce
5- Bake for another 15 Mins
And Voilla, you have a heavenly Dish and Plant based NO meat ๐Ÿคฃ

Plants have all the ingredients for health and wellbeing
Organic Wheatgrass and Barleygrass are the premium Plant based foods next would be Broccoli and Tumeric
Suggest you take wheatgrass and barleygrass as a supplement as eating lawn clippings is not recommended, Tumeric can be taken as addition to food. Broccoli should be only brought to the boil for a few seconds as the long you cook it the more value you loose.

That is my experience too. In fact on many Sites that are Advert based, they have so many Ads loading that it crashes my browser or makes it crawl like hell, but not here on Anoox, my browsing is always blazing fast ๐Ÿ˜€

Try making a what I call 'Chilli SIN Carne' by using soya minced pieces or Quorn mince (fungI based). If you fry them with all the other ingredients before adding any liquid, tomatoes etc rather than add near the end of cooking, this should give a better taste. (SIN = WITHOUT for non-Spanish speakers.) It is as good as the meat based dish.

1st, congrats for going Plant based food and not eating any more Animals.
2nd, here is a simple yet delicous idea:

Southwest Salad
2 cans black beans, drained and rinsed
1 can corn, drained and rinsed
4 Roma tomatoes, chopped
1/2 Bermuda onion, chopped
1/2-1 cup chopped cilantro or 1 cup of chopped fresh basil
2 avocados, peeled and chopped
Juice of 1 lemon and 1 lime
Salt and pepper

Optional Dressing: Equal parts olive oil and balsamic vinegar (about 1/3 cup each). I say optional, though, because with the oil from the avocados, I could easily skip the dressing.

I can tell you what to avoid:
Avoid eating shrimp, it's a bottom feeder that can be high in ocean contaminants. Shrimping practices like trawling ravage ocean life.

I invite you to visit my Pinterest site Board Nutrition Tid-bits for information on plant stanols and where they are found. Plant stanols have been found to lower the risk of heart disease and can be found in vegetable based products like extra-virgin olive oil, canola oil, Brussel sprouts, wheat germ, wheat bran. Soy based products are also plant based and can be used to substitute for meat products in recipes that call for ground beef or meat patties, for example. Several good recipe books exist from titles such as plant based recipes, to vegetarian recipes to Mediterrean Diet recipes, to name a few. One of my fave recipes is stuffed green peppers and I substitute soy crumbles for the ground beef. There are many recipes for stuffed peppers.
